This spectacular coffee hails from La Cristalina, one of three farms under the Cafe cuatro Generaciones, named for the four generations of Valdes who have been proud coffee farmers. This coffee was fermented for 30 hours at room temperature and then dried at lower temperatures for 50 days. The Valdes focus on supporting biodiversity throughout the farm with many different types of trees acting as habitat for a variety of native birds.
