At Coffee By Design, we believe that great coffee can be a catalyst for ethical stewardship, positive social change, artistic creativity, and building community. But it all starts with handcrafted, high-quality coffee.
In our 21,000 sq. ft. artisan roastery, located in the same Bayside building as our Diamond Street coffeehouse, we take that word handcrafted extremely seriously. How our coffee beans are roasted is as important as how they are harvested and processed, and we approach the art of roasting with loving attention and profound precision. Everyone on our award-winning roastery team knows the importance of each tiny detail that goes into producing a great cup of coffee. They’ve been trained extensively to understand the aroma, sound, look, and feel of beans prepared with our state-of-the-art, environmentally friendly roasting equipment.
We roast only the best quality coffee beans in small batches in our two Loring Roasters, a Kestrel 35 kilo and Peregrine 70 Kilo, plus a San Franciscan sample roaster. Our roasting equipment helps us foster superior roasting conditions and guarantee that the coffee you get is consistent and full-bodied. Drum roasters like ours tend to be more expensive and more challenging to use, but it’s all worth it for the fully developed flavor of the final product we serve you.
Zero-Emission Roasters — We don’t have an afterburner and are able to collect and donate the chaff to Portland’s Permaculture Hub, where it is used as fertilizer. Our roasters reduce greenhouse gas emissions and energy consumption by up to 80%.
Roast-to-Order — We don't warehouse roasted coffee. Coffee is roasted for wholesale accounts when an order is placed. Our own coffeehouses order coffee three times a week and have a fifteen-day pull date for coffee, which is vacuum packed and heat sealed to ensure freshness. Website orders are roasted-to-order for each customer.
100% Traceability — We can follow every batch of coffee back to the farmer, or community of farmers, that produced it.
Signature Restaurant Blends — The roastery team works closely with restaurant chefs, managers, and owners to develop unique coffee blends to complement restaurants’ menus. We are proud to have our coffee served at many of the area’s top restaurants, including several James Beard award winners. Because of our small size and the way we roast our coffees, we can custom roast and blend in small quantities to ensure our partners get only the freshest coffee.
