Colombia Aura Diaz Papayo Washed

Aura Diaz has been working with coffee for more than 23 years. She is grateful to coffee for giving her a second chance after she was displaced from the neighboring state of Putumayo in 2001. She began with just 2,000 trees, gradually adding 500 to 1,000 each year. Today, she cares for 11,000 trees across the Castillo, Papayo, and Pink Bourbon varietals. 

The mysterious Papayo varietal, named for its coffee cherries that resemble miniature papayas, has origins that remain largely unknown. With characteristics reminiscent of both Pink Bourbon and Ethiopian Landrace varieties, some believe it to be “rediscovered,” first emerging in Colombia’s Huila region. Its beans are notably large and dense, requiring special care while roasting.
